White Peony (Bai Mu Dan) Tea - Organic
Organic White Tea Bai Mu Dan White Peony (Camellia Sinsensis)
Our White Peony Bai Mu Dan, from the Yen Bai region of Vietnam, is a very special Fairtrade White tea. Indigenous to the region, some of the wild trees from which the tea is harvested are thought to be more than 300 years old. They have deep roots which are able to access minerals in the soil which give the tea its characteristic flavour and long after-taste. The Hmong and Dao tribal communities in this area of Vietnam have been harvesting wild tea for their own use for generations, and each village has a communal tea processing drier for all to use. These communities are now able to make valuable incomes from selling the fresh leaves, benefitting from the Fair trading relationships that also allow them to command higher premiums. White teas undergo very little processing, with the fresh tips simply dried or steamed. Made with young leaves and buds, White tea has a lighter and more delicate flavour than Green or Oolong tea.
TASTING NOTES:Smooth, dried Apricot, slightly baked.
To make: 2tsp per cup and steep for 2-3 mins.
